Almond Flour Pancakes

Ingredients
½ cup almond flour
2 large eggs
½ cup unsweetened almond milk
1 tsp vanilla extract
½ tsp baking powder
1 tbsp olive oil
Directions
Combine all the ingredients except the oil in a bowl. Whisk together.
Heat skillet with oil over medium heat. When hot, add ¼ cup batter for each pancake.
Flip the pancake when the bubbles on the top start to pop.
Cook till both sides are golden brown.
Tips-n-Tricks
Usually, when the bubbles are mostly popped over medium heat, the pancake is the perfect golden brown on the one side. My father taught me this trick, and although it is hard to be patient, it does make for the ideal crips pancake. If it is burning or taking too long, you may need to adjust your temperature up or down.
Vanilla extract and baking powder are usually gluten-free, but to be certain, especially if celiac, read the labels.
