Wanna enjoy the delicious interior of an egg roll, without the extra fat and carbs of the exterior. This Egg Roll in a Bowl is the perfect option - could it be your new family favorite?
INGREDIENTS
1 tbsp Olive Oil
1 Garlic Clove, Finely Chopped or 1 tsp Minced Garlic from a Jar
1 tbsp Finely Chopped Peeled Ginger 1 tsp Dry Ginger Seasoning
1 lb Ground Pork or Ground Turkey
1 tbsp Toasted Sesame Oil
1/4 Head Green Cabbage, Thinly Sliced or Bag of Shredded Cabbage
1/2 Yellow Onion, Thinly Sliced
1 Cup Shredded Carrots
1/4 Cup Reduced-Sodium Soy Sauce
1 tbsp Sriracha
1 Scallion, Sliced
1 tbsp, Toasted Sesame Seeds (optional)
Dash of Salt
DIRECTIONS
In a large skillet, add olive oil and heat over medium heat. Throw in garlic and ginger, stirring until fragrant (about a 1 minute).
Add the pork or turkey and brown until fully cooked.
In the same skillet, push the pork to one side of the pan and add in the sesame oil, cabbage, onion, and carrots. Stir into meat.
Add soy sauce and sriracha to mixture, continue to cook over medium heat, stirring frequently until cabbage is desired tenderness. Usually 5-8 minutes.
Season with salt.
Serve and top with scallions and sesame seeds.
TIP: We also cook rice and add it to the bowl for additional hearth to feed our growing teenagers.
