Wanna enjoy the delicious interior of an egg roll, without the extra fat and carbs of the exterior. This Egg Roll in a Bowl is the perfect option - could it be your new family favorite?


INGREDIENTS

  • 1 tbsp Olive Oil

  • 1 Garlic Clove, Finely Chopped or 1 tsp Minced Garlic from a Jar

  • 1 tbsp Finely Chopped Peeled Ginger 1 tsp Dry Ginger Seasoning

  • 1 lb Ground Pork or Ground Turkey

  • 1 tbsp Toasted Sesame Oil

  • 1/4 Head Green Cabbage, Thinly Sliced or Bag of Shredded Cabbage

  • 1/2 Yellow Onion, Thinly Sliced

  • 1 Cup Shredded Carrots

  • 1/4 Cup Reduced-Sodium Soy Sauce

  • 1 tbsp Sriracha

  • 1 Scallion, Sliced

  • 1 tbsp, Toasted Sesame Seeds (optional)

  • Dash of Salt


DIRECTIONS

  • In a large skillet, add olive oil and heat over medium heat. Throw in garlic and ginger, stirring until fragrant (about a 1 minute).

  • Add the pork or turkey and brown until fully cooked.

  • In the same skillet, push the pork to one side of the pan and add in the sesame oil, cabbage, onion, and carrots. Stir into meat.

  • Add soy sauce and sriracha to mixture, continue to cook over medium heat, stirring frequently until cabbage is desired tenderness. Usually 5-8 minutes.

  • Season with salt.

  • Serve and top with scallions and sesame seeds.


TIP: We also cook rice and add it to the bowl for additional hearth to feed our growing teenagers.
