Southern BBQ Joes & Carrots

INGREDIENTS

  • 1 tbsp avocado oil

  • 2 medium onions, chopped

  • 1 bell pepper, chopped

  • 2 garlic gloves, minced

  • 1/2 tbsp ground cumin

  • 1 tsp chili powder

  • 1 lb ground skinless turkey breast

  • 1 cup ketchup

  • 2 tbsp packed dark brown sugar

  • 2 tbsp Worcestershire sauce

  • 1/2 tsp salt

  • 6 hamburger buns (omit to reduce macros)

  • 6 medium sliced carrots

  • 1/2 tsp Lowry's Season Salt


DIRECTIONS

  1. Preheat oven to 425 degrees Fahrenheit

  2. In bowl, mix sliced carrots, small splash of avocado oil and Lawry's Seasoning, toss to coat spread on a cooking sheet (if available, line with parchment paper) and cook in preheated oven for 15-20 minutes till desired softness of carrots

  3. While carrots cook, in a large nonstick skillet, heat oil

  4. Fry onions, pepper and garlic until soft

  5. Stir in cumin and chili powder to coat veggies

  6. Add turkey to skillet, cook through

  7. Add ketchup, brown sugar, Worcestershire sauce, and salt

  8. Cook until sauce is slightly thickened

  9. If using buns, toasting them slightly add a nice crunch is a delicious way to serve them. If you are avoiding too many carbs and gluten, please omit the buns

  10. Serve with cooked carrots
