Avocado Lime Shrimp Salad

Ingredients

  • 1 lb large shrimp, peeled and deveined

  • 2 avocados

  • ¼ cup fresh cilantro

  • 2 limes

  • 2 tbsp olive oil

  • Dash salt and pepper


Directions

  1. Add the shrimp to a skillet over medium heat. Cook until pink and cooked through, usually about 2-3 minutes per side. 

  2. While the shrimp is cooking, dice the avocados and chop the cilantro and red onion. Combine in a bowl. 

  3. Add cooked shrimp to the bowl and squeeze both limes over the mixture. 

  4. Finally, add olive oil, salt, and pepper to your liking. Toss to combine.


Tips-n-Tricks

  • If you aren't a multitasker, prepare the avocados, onion, and cilantro prior to cooking the shrimp.
