Grilled Chicken Breast Chef Salad

Ingredients
4 oz grilled chicken breast (sliced or diced)
2 cups romaine lettuce (or mixed greens)
½ cup cherry tomatoes (halved)
¼ cup cucumber (sliced)
¼ cup shredded carrots
¼ cup shredded cheese (cheddar or Swiss)
1 hard-boiled egg (sliced)
2 tbsp avocado (diced)
2 tbsp croutons (optional)
2 tbsp light ranch or vinaigrette dressing
Directions
Grill or bake the chicken breast (season with salt, pepper, and garlic powder). Once cooked, slice.
Wash and chop the lettuce, tomatoes, cucumbers, and carrots.
Arrange the greens on a plate or in a bowl, then top with chicken, veggies, shredded cheese, egg, avocado, and croutons (if using).
Drizzle with your preferred dressing. We like this Light Balsamic Vinaigrette by Whole Foods Market
Toss lightly and enjoy!
Tips-n-Tricks
For lower fat, use fat-free cheese or skip the avocado.
For lower carbs, omit the croutons.
