Avocado Smoothie

Ingredients

  • 2 medium ripe avocados, pitted and scooped

  • 2 cups unsweetened almond milk

  • ½ cup heavy whipping cream

  • 4 tbsp granulated erythritol (or keto-friendly sweetener of choice)

  • 2 tsp vanilla extract

  • 1 cup ice cubes

  • 1 tbsp MCT oil for added ketone production (optional)


Directions

  1. Add avocados, almond milk, whipping cream, erythritol, vanilla, and ice cubes in a blender.

  2. Blend until smooth. 

  3. Add optional MCT oil and blend for an additional 30 seconds.

  4. Add sweetener for desired taste.


Tips-n-Tricks

  • Serve in a chilled glass. 

  • Vanilla extract and erythritol are typically gluten-free, but check the labels if you are sensitive or have celiac disease.
