Smash Cheeseburger Taco

Ingredients

  • Cooking spray

  • 1 lb lean ground beef

  • 4 low-carb 6” tortillas

  • Dash Salt & pepper

  • 1 tbsp mustard

  • 4 slices of cheddar cheese 

  • ½ cup mayo (or plain yogurt for fewer calories)

  • 3 tbsp sugar-free ketchup

  • 2 tbsp dill relish

  • 1 tsp white vinegar

  • ¼ tsp paprika


Directions


TACO

  1. Warm a skillet over medium heat.

  2. Mix a dash of salt, pepper, and mustard in a bowl. 

  3. Separate the meat mixture into 4 balls. 

  4. Spray skillet with cooking spray. 

  5. Evenly spread one of the meatballs onto a tortilla, all the way to the edges. 

  6. Place the tortilla, meat side down, onto the skillet, and fry for 2-5 minutes.

  7. Flip it over, cover with cheese, and continue cooking until it is melted. 

  8. Top it off with the spread!


SPREAD

  1. In a bowl, mix mayonnaise (or yogurt), ketchup, relish, vinegar, salt, and paprika.


Tips-n-Tricks

  • To make this even healthier, use ground turkey; however, it can be a bit trickier since you need to cook it completely, and it can be hard to see how it's doing between the tortilla and the meat. 

  • This is a versatile recipe; feel free to use your own favorite toppings. 

  • Easiest to eat like a taco–fold, hold, and enjoy!
